The Story of Bakery Hill

David, together with wife Lynne established Bakery Hill Distillery in Melbourne, Victoria just before the turn of the last century.

With an eye to the future, David’s inate creative flare, a food science background and a passion for malt whisky, David began an investigation into the feasibility of establishing a malt whisky distillery in Australia.

Encouraged by many trips to Hobart to “check out” the others, the distillery was established and straddling two occupations for 5 years, the first spirit flowed in 1999. Davd Baker

The whole idea of a distillery was reinforced considerably as he was constantly reminded that malt whisky it couldn’t be made successfully in Australia. All that is history now as David has established a successful distillery on the edge of the Yarra Valley approximately 25Km N.E. from Melbourne. While all these career moves were playing out, David found a life partner and now together with wife Lynne have two sons, all with an interest in distilling and consuming; but not necessarily in that order.

Bakery Hill Single Malt Whisky is an embodiment of the Australian spirit – one of individuality, complexity and strength. Its very name is synonymous with an uprising that helped define the nation’s character, the Eureka Stockade.

On graduation, from a Bachelor of Science Degree majoring in microbiology and biochemistry, David found employment with a large multinational food manufacturing company, first acting as a research and development chemist, investigating general fermentation chemistry and protein extraction from yeast cells and later after the mandatory year or so in R&D he was “promoted” to production; initially as a scientific officer and later a production manager. Although enjoying the work, David found himself moving further and further from his great love, chemistry.

To solve this situation and re-establish his career path David returned to University of Melbourne and completed a Diploma in Education before teaching chemistry in Victoria. This addition Diploma led to a long and satisfying teaching career at schools both in country Victoria and metropolitan Melbourne.
